- 900 kg azúcar
- 1 rama canela (opcional)
- Cáscara de limón y /o naranja
- Jugo de 1 limón
- 4-5 gotas esencia de vainilla
- 1,5 lt agua

- Lo primero que se debe hacer es cortar en cubos el kg de zapallo o calabaza en trozos más o menos iguales y colocarlos en una olla. A esto le agregamos el azúcar, pero solo la mitad...la otra la reservamos para el momento de cocción, tapamos y dejamos descansar por 3 horas aproximadamente que el zapallo largue todo su jugo.
- Pasada esas 3 horas verás que ha largado agua... su propio jugo. A esto le agregamos lo que resta del azúcar, el jugo de limón, las cascaritas de los cítricos, y la rama de canela...y el agua. lo llevamos a hervor y demorará entre 20 a 30 minutos. Antes de apagar el fuego le agregamos las gotas de vainilla. Para saber cuándo está listo lo vamos pinchando con un palillo o cuchillo y una vez que esté bien blando lo apagamos.
- A esto así en caliente lo pasamos por una procesadora y ya tenemos nuestro dulce listo...
